Pasta Fazool

A few years ago, when I lived in an apartment in Virginia, my dear friend Nicole had her parents come to visit her. Her Dad made this in huge batches and they invited me for dinner. I have tried over the years to duplicate his recipe and this is a huge hit in our house. This is a fantastic quick and delicious meal for the whole family. This also freezes very well. We freeze in in 1 cup glass Pyrex dishes to reheat them quickly for a school lunch.

Ingredients

  • Pasta (we used ditalini, but you can use farfalline, orecchiette or other similar pasta)
  • 1/4 cup Butter
  • 1/4 cup Olive oil
  • 3-4 cloves garlic
  • 2 tbsp dried Parsley
  • 1/2 cup Parmesan Cheese
  • 2 cans Cannellini Beans (white kidney beans)
  • Salt and pepper

Directions

  • Cook entire package of pasta al dente. Rinse and set aside.
  • In large pot (we used our 8 quart pasta pot) melt 1/4 cup butter. Toss in minced garlic to cook.
  • Add in parsley and Cannellini beans, salt and pepper to taste.
  • Add pasta into mixture and stir until well coated.
  • Drizzle in olive oil as needed to moisten pasta, maybe 1/4 cup.
  • Toss in Parmesan cheese. serve immediately.
