Pasta Fazool
A few years ago, when I lived in an apartment in Virginia, my dear friend Nicole had her parents come to visit her. Her Dad made this in huge batches and they invited me for dinner. I have tried over the years to duplicate his recipe and this is a huge hit in our house. This is a fantastic quick and delicious meal for the whole family. This also freezes very well. We freeze in in 1 cup glass Pyrex dishes to reheat them quickly for a school lunch.
Pasta Fazool Recipe
Ingredients
- Pasta (we used ditalini, but you can use farfalline, orecchiette or other similar pasta)
- 1/4 cup Butter
- 1/4 cup Olive oil
- 3-4 cloves garlic
- 2 tbsp dried Parsley
- 1/2 cup Parmesan Cheese
- 2 cans Cannellini Beans (white kidney beans)
- Salt and pepper
Directions
- Cook entire package of pasta al dente. Rinse and set aside.
- In large pot (we used our 8 quart pasta pot) melt 1/4 cup butter. Toss in minced garlic to cook.
- Add in parsley and Cannellini beans, salt and pepper to taste.
- Add pasta into mixture and stir until well coated.
- Drizzle in olive oil as needed to moisten pasta, maybe 1/4 cup.
- Toss in Parmesan cheese. serve immediately.
