Creamed Chicken & Waffles

As a kid, I remember vacationing with my parents in New Jersey where we often visited “Uncle Bill’s Pancake House” for breakfast. One of our favourite items on the menu was their creamed chicken and waffles. This is a delicious and savory dish that can be served for breakfast or dinner.

Creamed Chicken and Waffles Recipe

Waffles

You can use frozen waffles or use a recipe like the one below adapted from this recipe at Food.com. These waffles are light and fluffy and a great alternative to thick and sweet Belgian style waffles.

Ingredients

  • 1 1/3 cups flour
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons sugar
  • 2 eggs, separated
  • 1/2 cup butter, melted
  • 1 3/4 cups milk

Directions

  • In a large mixing bowl, whisk together all dry ingredients.
  • Separate the eggs, adding the yolks to the dry ingredient mixture, and placing the whites in a small mixing bowl.
  • Beat whites until moderately stiff; set aside.
  • Add milk and melted butter to dry ingredient mixture and blend.
  • Fold stiff egg whites into mixture.
  • Ladle mixture into hot waffle iron and bake.

Creamed Chicken Topping

This is a family recipe – something comparable to the topping at Uncle Bill’s that my dad has refined over the years.

Ingredients

  • 2 chicken breasts
  • 4 cups chicken stock
  • 1/2 cup onion, diced
  • 1/2 cup celery, diced
  • 2 Tablespoons parsley
  • 1 Tablespoon corn starch
  • 2 cups milk
  • Black pepper to taste

Directions

  • Boil the chicken breasts in chicken stock until fully cooked.
  • Shred the chicken with a fork or dice into bite-sized pieces.
  • In stock pot, sauté onion and celery in butter until onions are clear. Add in parsley, chicken and broth, black pepper. Bring to a boil.
  • Mix milk and cornstarch until blended. Gradually add into pot with chicken, stirring constantly.
  • Simmer on medium heat until sauce thickens
  • Serve over hot waffles.
